Follow these simple directions to make the best Matar pulao (peas pulao) you have ever had!
Wash the basmati rice in cold water until the water runs clear. Soak the rice in water for about 30 minutes. Drain the water and set the rice aside.
In a large, heavy-bottomed pot or a rice cooker, heat the ghee or oil over medium heat and add the thinly sliced onions, and sauté until they turn golden.
Add garlic and ginger paste to the rice. Add in cumin seeds and cloves after a few seconds. Sauté for a minute or until the spices release their aroma.
Now add peas and fry on medium heat. Let it sit for a few more seconds before adding yogurt and all dry spices together. Stir fry till a fragrant smell fills the air.
Add 2 cups of water. If you prefer a spicier pulao, add green chilies. (Add a chicken cube for more flavor) cook all the ingredients until the peas are half cooked and coated with the spices. Add the soaked and drained rice to the pot and mix it gently with the sautéed ingredients. Pour in the water and season with salt according to your taste and give it a good stir.
Cover the pot with a tight-fitting lid and reduce the heat to low. Let the rice and peas cook for about 10-12 minutes or until the rice is fluffy and fully cooked. Note: - If you like Smokey Flavors, the rice can be smoked for 5 minutes after it's ready.
Once the rice is cooked, turn off the heat and let it sit covered for a few minutes. Then, fluff the rice gently with a fork. Your aromatic and flavorful Matar Pulao is now ready! Add coriander and chopped green chilies to garnish the Matar pulao and serve.
